| INGREDIENTS - ½ cup Cooked corn kernels (only in the 40-gram side)
- ½ TBSP Olive oil
- ½ cup Sliced green or red bell pepper
- ½ cup Sliced onion
- 4 cups Mixed greens
- ½ cup Canned black beans, drained
- ¼ Small avocado, diced
- 85g Grilled top sirloin steak, thinly sliced
- Pre-prepared tomato salsa to taste (desired amount)
PREPARATION In a small frying pan, heat olive oil over medium-high heat. When oil is hot, add onions and peppers and sauté 4-5 minutes until soft and just starting to brown. Remove from heat and set aside. In a large bowl, combine mixed greens, black beans, corn (if included), avocado and salsa and toss well. Top with steak and sautéed vegetables. |
