Southwest Vegetarian Chili

  • 1 green bell pepper, chopped
  • 1 can (425 g) of black beans
  • 2 cups of corn, fresh or frozen
  • 1 medium onion, chopped
  • 1 can (425g) of fire roasted tomatoes
  • 1/2 cup of quinoa, uncooked
  • and rinsed
  • 2 1/4 cups of vegetable broth
  • 1 tbsp chili powder
  • 2 cloves of garlic, minced
  • 1 1/2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. ground cumin
  • 1 tsp. oregano

 

Place ingredients in slow cooker and cook on high for 3 hours.
