Sweet Potato Wedges

A terrific (and healthier) substitution for potato chips. Sweet potatoes are loaded with Vitamin A & Vitamin C.
  • 2 medium sweet potatoes
  • 3 TBSP olive oil
  • 1 TBSP cornstarch (optional, but helps make them crispy)
  • 2 tsp paprika
  • ¾ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp ground cumin
  • ¼ tsp ground red pepper (cayenne), optional

Peel sweet potatoes; cut them into 1/2-inch strips to resemble French fries. Mix remaining 2 TBSP of olive oil, cornstarch and spices in a large bowl or zippered plastic bag. Add prepared potato strips and mix very well until evenly coated.
Spread potatoes in a single layer on the heated cookie sheet. Bake 20-35 minutes, turning them over a few times during cooking so they will brown evenly.
